Blueberry Pancakes
1 cup nonfat milk
1 teaspoon vanilla
½ teaspoon orange extract
2 tablespoons unsalted butter
¼ teaspoon kosher salt
1 tablespoon dehydrated honey
One egg, lightly beaten
¾ cups all-purpose flour
½ tablespoon baking powder

Mix together milk, butter, salt, honey, vanilla and orange extract. Heat until butter is melted and honey is dissolved. Let the liquid cool.

Add beaten egg to liquid, stir thoroughly.

Combine flour and baking powder. Add flour mixture to liquid. Stir until just mixed (there will be lumps-over mixing will make pancakes tough)

Let batter rest for 20 minutes.

Gently fold in blueberries.

Heat griddle to approximately 375°Fahrenheit. Lightly oil the griddle and pour ¼ cup of batter onto the griddle. Cook on one side until bubbles form on edges and pop. Flip pancake to other side and cook approximately 30 more seconds or until cooked through.
Makes approximately eight five inch pancakes
