Fluffy Pancakes

1 ½ c sifted flour

 2 1/2 t baking powder

½ t salt

1 egg-lightly beaten

 1 ¼ C milk

3 T canola oil (or melted unsalted butter, cooled to room temperature)

1 t vanilla

1 T honey powder (see Getting Started)

  1. Stir together flour, baking powder and salt.

  2. Stir together egg, milk oil, vanilla a honey powder

  3. Combine the 2 mixes together until just combined. The mixture will be somewhat lumpy. Do not over mix or you will have leathery pancakes.

  4. Let rest at least 20 minutes.

  5. Lightly oil a griddle or flat bottomed frying pan until approximated 375 F. (Pan will feel hot when your hand is hovering about 4” above the surface)

  6. Ladle 1/3 cup of batter onto/into surface. When the bubbles burst on the edges of the pancake, flip to the other side for approximate 30-45 seconds. Remove to a heated platter (or eat right away)

Makes approximately 12 pancakes
