Simple Fresh Tomato Sauce
Simple Fresh Tomato Sauce
2 T olive oil
1 clove garlic, minced
1 C chopped fresh tomatoes (with skin on is fine—so are drained canned tomatoes)
¼ C semi dry-dry white wine
½ c reduced sodium chicken stock
1t oregano, crushed
Salt and Pepper to taste
-
Heat oil in large skillet on medium heat.
-
Add the garlic. Cook until golden. (Don’t walk away at this point. Burned garlic is unrecoverable and you will have to start over.)
-
Add the tomatoes, wine, stock and oregano. Reduce heat to medium low and place a lid on the pan. Let cook until the tomatoes start to break apart. (10 minutes…)
-
Remove the lid and let the liquid reduce to half its original volume.
-
Salt and Pepper to taste. Serve with any cooked pasta you like.
Makes approximately 1 C of sauce
