Simple Fresh Tomato Sauce

2 T olive oil

1 clove garlic, minced

1 C chopped fresh tomatoes (with skin on is fine—so are drained canned tomatoes)

¼ C semi dry-dry white wine

½ c reduced sodium chicken stock

1t oregano, crushed

Salt and Pepper to taste

 

  1. Heat oil in large skillet on medium heat.

  2. Add the garlic. Cook until golden. (Don’t walk away at this point. Burned garlic is unrecoverable and you will have to start over.)

  3. Add the tomatoes, wine, stock and oregano. Reduce heat to medium low and place a lid on the pan. Let cook until the tomatoes start to break apart. (10 minutes…)

  4. Remove the lid and let the liquid reduce to half its original volume.

  5. Salt and Pepper to taste. Serve with any cooked pasta you like.

Makes approximately 1 C of sauce
