Thai Style Pork
¾ lb lean pork scallops, sliced into ½” wide strips
1 ½ t cornstarch
1/1/2 t fish sauce
1/2T canola (or grapeseed) oil
½ C thinly slice, white or yellow onion
1 t minced garlic
2 t grated ginger
¼ C light coconut milk
1 ½ T Sirachi hot sauce (can use any type of hot sauce, but this is the best one)
1 ½ T dehydrated honey (regular honey is fine)
1 ½ T lime juice
½ t lime zest
1 T fresh cilantro, coarsely chopped

Stir together the pork, cornstarch and fish sauce.

Heat oil to on medium high until the oil starts to shimmer (Don’t walk away from the stove unless you want to put out a kitchen fire). Turn the heat to medium, add the pork and sauté for about 3 minutes. (Don’t worry that the meat is only half cooked—it’s gonna go back in).

Remove the meat from the pan.

Add the onion, garlic and ginger to the hot oil and sauté for 1 minute.

Return the meat to the pan. Cook on medium for 4 more minutes.

Stir in the coconut milk, hot sauce, juice and zest. Heat though (about 45 seconds, more or less—depends on the size of your pan)

Remove from the heat. Sprinkle on the cilantro. Serve hot.
