SPRIMP WITH ANGEL HAIR
SHRIMP WITH ANGEL HAIR PASTA
1lb shrimp*, peeled and deveined
3 T unsalted butter
1/4 C dry white wine (Do not use cooking wine-I will hurt you!)
3/4 c low sodium chicken broth (homemade or canned–your choice)
Shredded zest and juice from one medium lemon
1/3 c chopped parsley
Salt and Pepper to taste
3 C cooked (al dente- read the cooking instructions on the package) angel hair pasta
Fresh parmesan cheese (If you use the stuff in the green can, I will hurt you!)
1. Melt butter over medium heat
2. Add shrimp and saute until opaque, put to the side and keep warm
3. Add wine, broth, zest and juice. bring to a boil and reduce volume by 1/2. (I don’t know how much juice you got from your lemon, so eyeball it! Cooking is an adventure!!)
4. Return shrimp to pan. Add the parsley and the pasta. Toss to coat.
5. Check and add salt and pepper to taste.
Serve immediately with parmesan cheese to taste
Makes 2 servings
*If using frozen shrimp, thaw and drain first.
