Vegetarian Polenta

1 C veggie stock
1 C oat milk
1/2-3/4 C dry polenta (The amount depends on whether you want a soft or firm dish. The soft will be like a pudding and the firm you can slice. If you want you can slice it, lightly flour the slices and brown them in butter or oil. Yum.)
2 T vegan butter
Chives and salt to taste

1)Bring stock and milk to boil. 

2)Slowly add polenta, stirring constantly.

3)Reduce heat and continue to stir occasionally until grains are mostly soft (approx. 15-20 minutes). 

4)Cover with a tightly fitting lid and remove from heat. Let steam for another 15 minutes. Check for tenderness. If soft, add butter, chives and, if needed, salt. 

Makes 2 servings as a main dish and 4 as a side.
